Outback Selection Food
Our cruises & tours feature a tasting of specifically selected produce from the region to take your
experience to another level.
We use a fusion of traditional & modern techniques with fresh & commercial ingredients, providing
intense unique flavours that come from our region. Not intended as a main meal but as a culinary insight into the
area you are touring.
The variety of tastings vary with the tour or cruise taken & the availability of produce. See below for some
produce used.
Aged Free Range Spring Watered Saltbush
Mutton
For an absolute taste of the tour region we purchase hand selected sheep from our tour area. Mutton is the
forgotten meat & was a staple diet for the early settlers of the region.
Mutton provides a more intense flavour than lamb as it has had time to absorb the flavours of the pasture it has
grazed on. What makes the sheep from Wilkatana so flavoursome is what they eat & drink. The free range native
pasture predominately of salt bush gives an herbaceous flavour & the clean spring water of the Flinders Ranges
helps to cleanse the animal. The sheep is free range grazed on this pasture for a minimum of 400 days for maximum
flavour absorption. Upon processing the carcass is allowed to age for 7 days to enhance tenderness before being
divided into the various cuts of meat to be used in our cuisine.
Organic Outback Kangaroo Fillet
Kangaroo provides an indigenous taste to the area you are touring. Kangaroo meat has rich flavour that is low in
fat & we only use prime fillet for the best taste.
Smoked Yellowtail Kingfish
Spencer Gulf smoked kingfish has been a local delicacy for generations in the area. The smoking process produces
magnificent moist earthy taste.
Top of the Gulf Salt
The top of Spencer Gulf is the backbone of our touring & cruising. So why not taste that too. We have taken
the time to extract salt from the gulf & using it in the cooking process where appropriate.
Old Man Salt Bush
For added flavour in selected dishes we use
fresh saltbush from our own herb garden.
Native Herb Sauces & Relishes
To compliment the tasting we use a selection of sauces & relishes made from native bush foods. Such as
Quondongs, Kutjera, Native Peppers, Wattle Seed & Lemon Mrytle.
